Ingredients

  • 1 lb 1 boneless, skinless chicken breasts

  • 1 can 1 (10 oz) Rotel

  • 1 package 1 (8 oz) spaghetti

  • 1/2 cup 1/2 grated Parmesan cheese

  • 2 tbsp 2 olive oil

  • 1/4 cup 1/4 diced onion

  • 2 2 minced garlic

  • 1 tsp 1 chili powder

  • 1 tsp 1 oregano

  • 1/2 tsp 1/2 cumin

  • Salt and pepper to taste

Directions

  • Preheat the oven to 375°F.
  • In a large pot, bring a pot of salted water to a boil.
  • Add the spaghetti and cook until al dente, about 8-10 minutes. Drain and set aside.
  • Heat the olive oil in a large skillet over medium-high heat.
  • Add the chicken and cook until browned, about 5 minutes.
  • Add the onion, garlic, chili powder, oregano, cumin, salt, and pepper and cook until the vegetables are softened, about 5 minutes.
  • Add the Rotel and simmer for 5 minutes.
  • Add the spaghetti to the skillet and mix to combine.
  • Transfer the mixture to a 9×13 inch baking dish and sprinkle with Parmesan cheese.
  • Bake for 20 minutes, or until the cheese is melted and bubbly.
  • Serve and enjoy!
