This Lemon Bread Recipe is a light and fluffy bread that’s filled with the tangy flavor of fresh lemon. It’s great for breakfast, brunch, or as a snack.

Ingredients

  • 2 cup 2 all-purpose flour

  • 1 tsp 1 baking powder

  • 1/2 tsp 1/2 baking soda

  • 1/2 tsp 1/2 salt

  • 1/3 cup 1/3 vegetable oil

  • 1/3 cup 1/3 granulated sugar

  • 2 2 large eggs

  • 1/2 cup 1/2 lemon juice

  • 2 tbsp 2 lemon zest

  • 1 tsp 1 vanilla extract

  • 1/2 cup 1/2 buttermilk

Directions

  • Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a separate bowl, whisk together the oil, sugar, eggs, lemon juice, lemon zest, and vanilla extract until combined.
  • Add the wet ingredients to the dry ingredients and stir until just combined.
  • Add the buttermilk and stir until just combined.
  • Pour the batter into the prepared pan and bake for 35-40 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
  • Let the loaf cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
